Pazo de Señoráns
At Pazo Señoráns, one travels back in time. Converted into a winery, it is a magnificent representation of Galician manor homes (of 16th century), built in the countryside with all the charm and gentry of times past.
Pazo Señoráns is enclaved in Vilanoviña, in the Pontevedra locality of Meis, Salnés valley (Rías Baixas D.O).
The Pazo and the winery, a property initially owned by the couple Marisol Bueno and Javier Mareque - now in the hands of their four children: Marisol, Vicky, Javier and Santiago - began its winegrowing journey in 1989, although the harvest of the vineyards began earlier.
The vineyards are, in their totality, of the local albariño variety, characterised by the use of the vine as a conductive system and for being located in different areas, all in a radius of about 10km, close to the sea.
The setting of the land is not uneven, although is very special; it's made up of mostly a sandy soil, a result of the decomposition of granite rock and with a huge drainage capacity.
Several R+D+I projects are underway, one of them to study an improved harvest of the albariño via remote sensoring.
We're also interested in the environment. Solid residuals are managed in an ecologically friendly way, and are processed in a composting plant for their subsequent use as fertiliser for the vineyards. And any residual water goes through a complex biodepuration system.
In the production of our spirits (grape marc and herb spirit) we use the traditional Galician method: over the fire in copper stills. This allows us to obtain, after two distillations, a product of the highest quality, in which varietal notes and elegance prevail.
