Today, owned production is about 10% of the total obtained from the two lots planted in the Meaño area, with 3 hectares of vineyard; with the rest belonging to winegrowers in the Val de O Salnés region, who supply the best grape to the district thanks to agreements signed from the moment commercial relations began. The technical personnel of the winery is in charge of guiding the process at all times, with informative talks and quality control of the vineyards, where methods are taught so that the quality of the raw material is increasingly better. At the time of harvest, strict quality control procedures are followed, so that the raw materials are delivered to the winery in optimal conditions in terms of quality and state of the product. The facilities and investment in the newest machinery include the selection table, a macerator, pneumatic presses, a destemmer, completely insulated conservation room and a temperature - in both the stainless steel tanks and the room itself - that is controlled by two cooling machines and climate control mechanisms, with the sole purpose of keeping the wine at the optimal temperature for conservation. Added to this is the vacuum filter, entirely automated bottling plant and the storage room for the finished product, which all add to making sure that the product reaches the final consumer in optimum conditions. The winery's current production is of about 300,000 bottles and, although the facilities have a greater capacity of up to 600,000 bottles, we prefer to sacrifice quantity in favour of quality. Producing at a higher lever, given the productive structure of the winegrowers in the area - where average production levels of a winegrower in Rías Baixas is of approximately 6,000 kg of grape - would involve accepting grapes with lower quality standards, forcing us to forgo the careful selection of grape upon receipt. This selection is what currently gives us such positive resutls, and is what allows us to strive for important international awards.
