In 2001, with the extension of the Rías Baixas Denomination of Origin to the region, the current winery was founded, combining family tradition with the latest techniques in winegrowing. Each year, from the original vineyards and the new vines that are added, the Gundián albariño is born. A wine that takes part in major contests in the sector, and which has been awarded prizes in competitions such as Challenge International du Vin in Bordeaux, the International Wine Challenge in London, or the Cata-Concurso Albariño Rías Baixas. Every September, harvest starts, and expert hands collect the bunches of grapes which are transported to the in-take area of the winery. The grape goes through several processes before arriving to large, stainless steel tanks, where the wort is fermented at a constant temperature of 18 degrees.
